Homemade Pizookie


Hubby and I had dinner at BJ's restaurant last Saturday. It was delicious! I love going out to dinner trying new foods, then coming home trying to recreate the meal for less. I ALWAYS order dessert! I ordered the Pizookie. It was a pizza like chocolate cookie topped with a scoop of ice cream. It was $6.95 per dish. I just had to figure out a way to make it at home for less. I went to my local restaurant supply store and bought four 7" pizza pans they were $1.46 each. Here is the recipe:
2 1/2 tablespoons salted Butter (softened)
1/4 cup light Brown Sugar (packed)
1 tablespoon beaten Eggs
1/4 teaspoons Vanilla Extract
6 tablespoons all-purpose Flour
1/4 teaspoon Baking Soda
1/3 cup semi-sweet Chocolate Chips
Preheat oven to 450 degrees. Combine first 4 ingredients. Mix well with a mixer. Add flour, and baking soda. Stir in remaining ingredients by hand. Butter the pan, lightly. Press the dough into the center of the pan. place into the oven & bake 5 minutes. (Because I like my cookies hard, I baked my Pizookie 7 minutes.) Take the Pizookie out of the oven & allow to cool 1-2 minutes. Top with a scoop of ice cream. Enjoy!
*As you can see the ice cream never made it to the top. (smile)

  1. I do that very same thing! I mean, those are just people that make those dishes, so why can't we? I've never had a cookie with ice cream on it. I know my family would love it though! I'll give this one a try.
