Homemade Vegetarian Chili


1 Zucchini (chopped)
1 Green Bell Pepper (chopped)
1 Red Bell Pepper (chopped)
1 small Onion (chopped)
2 Garlic clovers (minced)
1 Jalapeno (seeded and chopped)
3 tablespoons Olive Oil
1 can Corn (drained)
1 bag Morning Star Veggie Meatless crumbles
1 can Diced Tomatoes (14.5oz)
1 can Whole Stewed Tomatoes (14.5oz)
1 can Tomato sauce (15oz)
1 can Kidney Beans (15oz)
1 can Black Beans (15oz)
1 can Garbanzo Beans (15oz)
3 tablespoon Chili powder
3 tablespoon Celery flakes
2 teaspoons Season Salt
2 teaspoons Cumin
1 teaspoon Paprika
1 tablespoon Oregano
1 tablespoon Cilantro
2 tablespoons Sugar
1 tablespoon Parsley
2 teaspoons Thyme
1 tablespoon Basil
Saute' first six ingredients in olive oil using a large stock pot. Saute' until tender. Add remaining ingredients. Stir and simmer 20 minutes. Serve with some homemade cornbread. Enjoy!
