Homemade Oatmeal Cakes

I decided to create my own homemade version of the Little Debbie oatmeal cakes. They were actually not difficult to make. Here is the recipe that I used: 2 stick of softened butter, 1 cup of packed brown sugar, 1/2 cup granulated sugar, 2 eggs, 1 teaspoon vanilla, 1 & 1/2 cups all purpose flour, 1 teaspoon baking soda, 1 teaspoon cinnamon, 1/2 teaspoon salt, 3 cups Quaker old fashioned oats. Mix and bake cookies for 8-10 minutes. I let my cookies sit in the pan for about a minute before placing them on a rack to completely cool.
For the cream filling I simply used a 7oz jar of Marshmallow, 4oz softened Philly cream cheese, and 1 to 2 cups of Powdered Sugar depending on how sweet you want your filling to be.
Once the cookies have completely cooled, fill the center of the cookie with 1 heaping tablespoon of filling and top with another cookie. Its that simple! Give these Homemade Oatmeal Cakes a try. They will leave you saying...Little Debbie who? Lol Happy Baking :)
